Signatory Malt Whisky
Signatory is
an independent bottler of rare Single Malts that would
otherwise be lost to the blenders. These Malts are hard
to come by but offer a unique chance to taste rare
offerings not available. These Malts are “all natural”
just as you would taste at the distillery in Scotland.

Clynelish ‘ 93
10 y.o. Signatory
(Northern Highland) Clynelish is Highland Malt with the
character of the Islay. Location is the reason for this as
the distillery is located in the northern most section of
the Highlands in the town of Brora, Sutherland. This is
actually a new distillery replacing the old Brora Distillery
in 1968. The style is slightly peated with a wif of the sea
air. Good malt flavors coming through a spicy, oily texture.
The finish is remarkably long. Serve this after dinner.

Caol Ila ‘ 91
11 y.o. Signatory (Islay)
The name of this malt (pronounce cull-eela) means sound
of Islay. This distillery is located on the North side of
the Island of Ilay and looks across the sound to Jura, thus
the name. This is a typical Islay with plenty of spice,
saltiness and that unforgettable peat. Enjoy this after
dinner with the fine cigar!

Port Ellen ‘ 79
23 y.o Sherry Cask
Signatory (Islay) This is one of the rare Islay
malts as it was closed in 1983. At one time a major
contributor to several of the popular blends, that job has
now gone to Caol Ila. This Port Ellen expression has a
beautiful balance of peat and malt. A big blast of peat at
the beginning, followed by a mouth, coating sweet malt taste
finishing with a dry dose of white pepper. Enjoy while this
limited malt lasts.

Rosebank ‘ 91
12 y.o. Signatory (Closed
in 1993) (Lowland) This lowland is considered to
be one of the more elegant in style. The malt has a flowery
sweet nose that betrays it’s full round flavor. Overtones of
lowland grass and herbs accentuate this warm and soft
spirit.

Highland Park ‘ 90
13 y.o. Signatory
Un-Chillfiltered Series (Island) This is a classic
example of Highland Park. The nose begins with a honey
overtone that moves to a delicate impression of salt sea
air. The palate begins sweet to a spicy balance of malt and
smoky peat. The finish is long with a sweet, white pepper
sensation that lingers nicely in the back of the palate. A
very balanced malt to end a meal with a nice cigar.

Caol Ila ‘ 90
12 y.o. Signatory Un-Chillfiltered
Series (Islay) Fresh sea air, the smell of cold
sand beaches, and the unmistakable smoke are in the first
nosing of this rare Islay Whisky. The first impression on
the palate is a sweet malt beginning moving into a peppery
spice that lingers in the finish. One of the contributors to
the Johnny Walker Blend, this rare Islay whisky is a real
treat.

Glen Rothes ‘ 90
13 y.o. Signatory
Un-Chillfiltered Series (Highland) This expression
of this very popular Speyside malt is a “first filled”
sherry cask aged in the original wood 13 years. The result
is a very bid dose of sherry on the nose mingling with the
typical heavy malt character of this distillery. Smooth,
silky, slightly oily on the palate, finishing with a
lingering spicy, malt, and sweet end. This full round
malt can be enjoyed after dinner.

Edradour ‘ 92
10 y.o. Signatory Un-Chillfiltered
Series (Highland) Massive amounts of sweet malt
mixed with a nutty aroma, this limited Un-Chillfiltered
version is a great expression of the tiny distillery in the
Southern Highlands. At 46%, a few drops of water continue to
open this deliciously rich malt up developing into malty-caramel,
with roasted almonds and a hint of dark chocolate. Enjoy
before dinner as an aperitif.

Hogs Head
Pure Malt Signatory Hog’s Head is a pure malt created by blending two single
malts together. The result is a malt that has a particular
taste profile. We decided to use a flowery Speyside Single
Malt and add a smokey Islay Whisky that would give it a
spicy finish. Enjoy this dram with a fine cigar or to finish
any meal.

Dufftown ‘ 85
7 y.o. Signatory
(Highland) Dufftown is arguably of the classic styles of
what a good Speyside should taste like. Big malt character,
with just a hint of peat in the finish. Mouth coating
starting out with a sweet nose of toffee moving into a
nutty, creamy malty lingering finish. This distillery once
owned by Bell’s was a contributor to many of their popular
blends. Enjoy as on aperitif before dinner.

Glen Crant ‘ 76
26 y.o. Signatory
(Highland) One of the more popular malts coming from
the Speyside region of the Highlands, this is a classic
expression of Glen Grant. Aged in a “re-filled” sherry cask,
the color is lighter and more amber. The nose is dry but
flowery with hints of sherry. The taste starts out slightly
sweet with good malt profile and then moves to a nutty,
dryness that is so typical of Glen Grant. This malt can be
enjoyed after dinner with a fine cigar.

Isle if Jura ‘ 88
14y.o. Signatory
(Island) The island of Jura, being one of the Inner
Herbrides, is the home of one distillery. Jura, named for
the island, is flowery style malt using peated barley from
Port Ellen on the Island of Isay. Its tall stills produce
lighter style single malt than its near neighbor Islay. This
expression is at cask strength of 59.3% vol. This is rather
oily, flowery malt that opens up with a few drops of water
into light peat, sweet malt, with a hint of salt sea air.

Longmorn ‘ 73
30 y.o. Signatory
(Highland – Speyside) (Rare Reserve-Wood Gift Box)
This is one of the greatest Speyside malts known for it’s
flavors and all-round complexity. This particular expression
is from “first filled” sherry cask that added an additional
sweet, almond component to this malt. This is” Cask Strength
“expression that is 57.0% alc/vol coming from cask 3966
producing 265 bottles.

Scotland’s Smallest Distillery A truly hand crafted
malt, Edradour is golden in the glass, with a delicious
aroma of sugared almonds and a hint of oloroso. The smooth,
creamy, light malty taste is followed by a mellow, warming

Glenlivet Rare Reserve Selection ‘ 75

y.o. Signatory This very popular Speyside is a single
cask expression of Glenlivet. It was sourced from a parcel
acquired from Pernod-Chivas. When this appeared on the
manifest, we anticipated its arrival in our bottling hall.
We were not disappointed. This 28 year old “first filled”
Oloroso Sherry Cask, had all the characteristics of a great
Glenlivet. Spicy cinnamon, and sweet raisin flavors, mingled
with the juicy oakey tannins of the sherry cask. The palate
suggests peat in the beginning, and then moves to the
syrupy, sweet, spicy profile. A long, soft, creamy, flowery,
finish makes this a classic Glenlivet. Cask strength of
54.5% alc/vol

Glen Rothes Rare Reserve Selection ‘ 73
30 y.o. Signatory (Highland – Speyside) A truly rare
expression of Glen Rothes indeed and very complex. This 30
year old came from a “first filled” Oloroso Sherry Cask
creating this bright, golden color. The nose is nutty with a
good balance of malt and sherry. The palate has flavors of
toffee, and ripe sherry fruitiness that move into layers of
spicy malt. The finish is complex and long with a smooth
creamy dryness. Cask strength of 50.0 % alc/vol

Springbank Rare Reserve Selection ‘ 69
34 y.o. Signatory (Campbelltown) This expression,
though 34 years old, is amazingly fresh and fruity. I guess
this should have been obvious to us when we saw the level of
alcohol and the condition of the cask. This is a “re-filled”
Sherry Butt (110 gallons). Only this size of a cask could
handle the long years of aging and still turn out this
lively. A nose of malty-sherry mixed with orange peel. This
unique Springbank has a complex palate of toffee, raisiny-orange,
and coconut finishing with a hint of salty peat and lemon
grass. A Rare Selection indeed. Cask strength of 54.4 % alc/vol

Brora ‘ 81
21 y.o.. Signatory Un-Chillfiltered
Series (Highland) The nose of this now closed
distillery suggests honey, green apple moving into green
mint. The palate is mouth filling with traces of sweet sugar
cane, caramel candy that quickly moves on the mid-pallet to
a white pepper/cumin pleasant spicyness. The finish is long
and complex that reveals the peated barley used to create
this delicious malt. Definitely a malt to savor with a good
book.

Strathmill (Sherry Cask) ‘ 92
11 y.o.
Signatory (Highland) The distillery has been
described as being “the whisky world’s answer to orange
muscat. This expression, although lighter in color, has the
aroma of orange peel, and rasins. It is a very oily with a
mouth coating sweet sugar cane complexity. Enjoy this malt
with desert or to finish a fine dinner.

Edradour 30 y.o.
Scotland’s Smallest Distillery (Highland) This is a very rare
expression of the “smallest distillery in Scotland”. Only
one cask was available to produce this creamy, rich
expression of Edradour. The color is pale but the malt that
developed over the 30 years in this cask is complex with
flavors of mint creamy almonds, finishing sweet. Delicious
malt to be savored after dinner with desert.

Ledaig ‘ 93
10 y.o. Signatory
(Island) This is a slightly peated malt deriving it’s
flavor directly from the water instead of the barley. Very
light in color bur full flavor associated with these Island
Whiskys. The nose is suggest a soft malt almost grassey. The
palate is full a rich with traces of toffee. A malt to enjoy
a lighter cigar with or a malt at the end of a long day.
